Almond Butter Stuffed Dates (Serves 5-6)

  • 12 Medjool dates
  • 12 tsp. Almond Butter (no added sugar or oil)
  • Optional Toppings: crushed pistachios, unsweetened shredded coconut, pomegranate seeds, chia seeds, hemp hearts, cinnamon a pinch of sea salt

Create a vertical slit in the center of the date, remove pits if necessary. Spoon one teaspoon of the almond butter into the center of each date. Add optional toppings to suit your taste.

Juice Pulp Brownies (Serves 12)

  • ¾ cup cocoa powder, unsweetened
  • 3 Tbsp. coconut flour
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 eggs
  • 2 cups juice pulp, firmly packed
  • ½ cup coconut oil, melted
  • ½ cup maple syrup

Preheat oven to 350F. Line an 8”x8” baking tray with parchment paper. Add the cocoa powder, coconut flour, baking powder, baking soda, and salt to a large bowl. Stir to combine. Whisk the eggs, pulp, oil, and maple syrup. Add the wet ingredients to the dry ingredients and stir to combine well. Use a spatula to scrape the batter into the baking dish. Bake for 30 mins until the top is firm and edges just start to pull away from the dish. Allow the brownies to cool.

Peanut Butter and Chocolate N'ice Cream (Serves 2)

  • 2 bananas, chopped and frozen
  • 1 Tbsp. cocoa powder, unsweetened
  • 2 Tbsp. peanut butter, unsweetened

Add chopped frozen bananas to a food processor. Pulse or lightly blend until almost smooth. Add cocoa powder and nut butter. Pulse or lightly blend until mixed. Serve immediately.

Better-for-You Peanut Butter Cookies (Serves 10-12)

  • 1 cup of raw almonds or almond flour
  • 1/2 cup of organic, fresh peanut butter (or almond butter)
  • 1 cup pitted medjool dates
  • 1 1/4 teaspoons of vanilla extract
  • ¼ teaspoon cinnamon
  • 1 handful of cacao nibs (optional)

Combine almonds, nut butter, dates, cinnamon and vanilla in a food processor and blend until a dough-like texture is achieved (a couple of minutes). Add more nut butter if necessary to make the dough stickier. Optional: Add cacao nibs and process on pulse for 15-20 seconds to break them up a little but still leave some whole. Form into small balls and use a fork to press down and create a crisscross pattern.

Watermelon Pops (Serves 6)

  • ¼ seedless watermelon, cubed
  • 1 cucumber, peeled and sliced
  • 5 mint leaves
  • ½ cup ice

Mix all ingredients in a blender. Pour into popsicle molds and freeze.
